Fast vantage is my go-to variety for making sauerkraut. This is because it is “Fast” and the earliest to get to harvestable size for me. I am in central Montana at 5,000 ft. elevation, with a 90 day growing season. I like the early fast growth in cool weather of this variety, so that I can get my sauerkraut made and put away early and get it out of the way before the main harvest jobs come. May not be the same for everyone, but for me it works and is my single biggest cabbage planting.
