Characteristics:
Also called Peredovik sunflowers and originate from Russia. Traditionally used for oil production and bird feed. But, more recently they have found a new uses for human consumption, namely sprouts or shoots. Sunflower shoots can be eaten fresh, added to salads, used as a garnish, or used in a wide variety of dishes. The seeds are meaty and sprout very quickly. The black seed coat (pericarp) is easily removed by hand or by washing. Harvest for shoots at 3-4”. It also works great as a warm-season cover crop for purifying soils and scavenging nutrients from deep.
